Food on Friday: January 2021

It's the second Friday of the month so here is Food on Friday.

As you can see, there are 2 new themes –  Cocktails/Mocktails and Using Leftovers .  I hope you'll find some great stuff in your archives to share.

Feel free to add a number of things under each category and come back later in the month to add more if you would like to.

To add your dishes, just put the name of the dish together with your blog name/name into the first Mr Linky box you will find below.  Then paste the url for your post about it into the second box. Mr Linky now makes you tick a compliance box which I always forget first time!

I'll be pinning your creations to the relevant Pinboards – Cocktails/Mocktails and Using Leftovers

Have fun! And Happy New Year!

Mango Cocktail

I looked back into my archives for something just a little bit Christmassy to share and came up with this Mango Cocktail.

If this doesn't feel Christmassy to you, just remember that where I live Christmas falls in high summer so tropical fruit is appropriate.

This lovely smooth cocktail is simple to make:

Instead of putting ice in it I just refrigerated all the ingredients overnight so they were nice and cool

For 4 serves just blend together:

180ml white rum (or less if you prefer less of a kick)
1 teaspoon or a bit more of lemon juice
425g can of mango pieces in juice
250ml of milk
2 tablespoons of caster sugar – I used ½ teaspoon of stevia powder instead

Pour into your festive glasses and enjoy.

Merry Christmas

Foodie Friday – Fancy a Bellini?

For a touch of glamour, try a Bellini.  It is a cocktail which originated in Venice at the famous Harry's Bar.  The inventor thought the colour of the cocktail was the same as a toga in a work by Bellini – and so the name was born.

The ingredients are simple – 70% sparkling wine (Prosecco) and 30% peach puree or nectar plus a touch of cherry juice to get the pink colour.

Watermelon Cooler – truly refreshing and not too sweet

Carole's Chatter: Watermelon Cooler – truly refreshing and not too sweet

A year round refresher for you today – Watermelon Cooler

Ingredients:

Watermelon (half)
Water
Ice
Sugar syrup (left over from my poached apricots)
Lemon juice
White rum (entirely optional)
Watermelon spears for garnish

Method:

Cut the rind off the watermelon and cut the flesh up into chunks – I didn't take the seeds out at this stage

Add a little water and blend with a stick blender.  Strain the result so you capture the seeds at this stage.

Add your sugar syrup, lemon juice and rum and blend up along with some ice cubes.  I used about 2 teaspoons only of rum – it was going to be drunk in the afternoon.  More would be fun too.

Serve with a watermelon spear for garnish.

Classic Champagne Cocktails

Carole's Chatter: Classic Champagne Cocktail

At this festive time of year, who can argue with a Classic Champagne Cocktail – whether it's made with Champagne or some other bubbly.

Ingredients:

Bubbles
Brandy
Angostura bitters
Sugar cube
Cherry – garnish

Method:

Put the sugar cube at the bottom of the glass
Sprinkle it with a few dashes of bitters
Add a small splash of brandy
Pour in the champagne – slowly it will fizz up
Garnish with a maraschino cherry
Enjoy!
