Food on Friday: September 2020

Asparagus & Bacon salad

Carole's Chatter: Asparagus & Bacon salad




I made this up when I needed to do a quick lunch and it turned out well.

Fry up some bacon – I used about 4 rashers cut into quarters

Boil water ready to cook asparagus – I didn’t salt it because I think the bacon has enough for the whole dish. 

Prepare asparagus by snapping off woody ends and then cutting into 2 pieces.  If you want to be luxurious, you could just use the tips and save the other half for making soup. 

Cook asparagus in boiling water for 4 -5 minutes – don’t overcook.

Put a sliced tomato, chopped avocado, a couple of slices of red onion, a roughly chopped spring onion into a salad bowl.  Squeeze over some lemon juice (say 1/3 to ½ of a lemon).  Season with pepper  - I used white but black would be fine.  I also put into about a teaspoon of olive oil – but you could leave that out since the bacon has fat.

When the asparagus is ready, drain it and toss it in the pan with the bacon, then put everything into the salad bowl.  Toss and serve as is - it will be warm but not too warm.

I served some condiments with it - a choice of sweet chilli sauce, chilli relish and mayo.

Asparagus and Raspberries – yes, really!




Carole's Chatter: Asparagus and Raspberries - yes really!

Now putting asparagus and raspberries together would never have occurred to me until I saw it in a recipe book.  Not only do the colours look pretty the taste works too!

Ingredients:

Thin asparagus spears
2 tblsp vinegar (preferable raspberry)
½ tsp salt
1 tsp of mustard (preferable Dijon)
1 ½ tblsp vegetable oil
½ tblsp sour cream
White pepper
Fresh raspberries

Method:

Trim your asparagus and then tie it into a bundle with a bit of string.

Boil for about 2 minutes (you might need longer if your asparagus is not really thin)

Pull the asparagus bundle out and plop it into some cold water.

Then pat it dry and pop it into the fridge to chill for at least 1 hour.

Make your dressing – mix the vinegar, salt and mustard first. Then add the oil slowly while stirring.  Last add the sour cream and pepper to taste.

After that its just an assembly job.  Asparagus on plate.  Drizzle dressing over and pop raspberries around the place.

Asparagus wrapped in smoked salmon with Hollandaise


Carole's Chatter: Asparagus wrapped in smoked salmon with Hollandaise


The outcome of this dish looked quite pretty but I felt it was a bit fiddly.  Maybe more for a special appetiser.

Ingredients:

Asparagus
Smoked Salmon slices
Lemon peel
Pepper
Olive oil
Hollandaise sauce (store bought)

Method:

Trim the asparagus – by this I mean snap a bit of the end of each spear and then peel another inch or so on the end.

Lightly steam the asparagus together with some finely chopped lemon peel

Wrap a salmon slice around 2 or 3 spears of asparagus – if I had more salmon available I would wrap the asparagus individually.

Fry each asparagus bundle in some good olive oil – I didn't turn the bundles over because I noticed that the salmon on the bottom was changing colour.

Heat your sauce.

Plate your bundles with some sauce – you will be able to make it much more beautiful than I managed.  A grind of pepper and you are done.
