I have been having trouble with this. I found this little tip. So before you put the eggs into the pan let it heat up a bit. The little imperfections in the metal surface will close up as the metal expands and your eggs will cook on top of the surface rather than into it.
Yess that trick does work. Also - I will let the pan cool to the point I can touch it without burning me and wiping it down right away. Either with paper towel or putting it in the sink right away and soaking :)
