We ate mutton regularly as children. It seems to have gone out of fashion now. So
what is mutton – it is the meat of a sheep that is at least 3 years old. Lamb comes from sheep under 1 year, then
hogget from 2 year old's. Talk about
ageism!
The meat is darker in colour and more strongly
flavoured – and has more fat. It goes without saying that mutton chops will be
larger than lamb chops. If you find some
to buy, try stewing it or in a curry.
Although we just roasted it.
We used to only eat mutton chops when I was growing up. I guess because it was cheaper than lamb.
