Foodie Friday – Worcestershire Sauce

Worcestershire Sauce is a British sauce which is also popular here in New Zealand.  The most well known brand is Lea & Perrins.

Two chemists (Lea & Perrins, funny that) invented the sauce in the 1800's.  They invented it in Worcester – thus accounting for the name.

I use it to add depth of flavour to soups and stews.  It is also good on bacon.  It is a classic ingredient of a Bloody Mary.

You don't want to dwell too much on what's in it – the ingredients are a bit off putting – like anchovies and tamarind.  But it is all fermented for a long time so the flavours meld together. It doesn't taste the slightest bit fishy.

  1. Well, you are just chalk full of info! Guess that's why I enjoy your blog so much!!! I buy L&P here in Michigan...I'll have to look to see if it's manufactured here in the states...or perhaps that's why it's so pricey because it's being shipped in! HA
