Mushrooms
on Toast are quite often on the menu in our
house. But this time I had 2 hard-boiled
eggs over as well. So I decided to try
putting the eggs and the mushrooms together.
And it worked out well.
Ingredients:
Sliced mushrooms (small brown ones)
Oil/butter
Tiny bit of chopped onion and chilli
2 hard boiled eggs (sliced)
Crème fraiche
Salt & pepper
Chopped parsley
Toast (buttered)
Method:
Heat up a pot with some oil/butter in it. Fry off your
onion, chilli for a minute then add the sliced mushrooms. When they are cooked add the egg. Let it warm through and then season to taste
with salt and pepper. Add a dollop of crème
fraiche and stir but don't boil.
Put the mushrooms and egg on top of your buttered toast
and garnish with the chopped parsley.
Yummmmmmmm! I make a recipe similar to this one.
