Ok, I had a meatball disaster.  I made quite large meatballs and then seared them off and popped them into the oven.  Despite a long cook, when I served them they were basically inedible – raw in parts and very bland tasting.

I hate throwing food out so the next day I decided to turn the meatballs into a shepherd's pie.  And it worked a treat.

So I cooked up some nice mashing potatoes and made a decadent mash with lashings of butter.

Then I cut up the meatballs into chunks.  I added a teaspoon of marmite (a yeast extract – you could substitute Worcestershire sauce).  The intention was to intensify the flavour a bit. 

I lightly cooked some cubed fresh carrot and mixed that in along with a good handful of frozen peas.  I didn't add any extra liquid since I figured that the leftover tomato sauce and the peas would provide enough.

I spooned the mash right over the top and flattened it out a bit.  Then a layer of grated cheese and breadcrumbs topped off with some knobs of butter.

I cooked it in a moderate oven for almost an hour and it was a pleasure to eat.

    We recently had a lot of spaghetti bolognaise sauce left over that we added lots of vegies too then covered with mashed potatoes. Made a very nice cottage pie!!
