Apologies that this side dish – which I have called Bacon Potatoes – is so basic. But it was tasty.
Ingredients:
A few rashers of bacon
Oil for frying – I used a mix of chilli oil, garlic oil
and extra virgin
Potatoes
Lemon juice
Mustard powder
Pepper
Salt if your bacon isn't salty enough
Sprig of mint for garnish
Method:
Cut up the bacon into strips. Fry it in your oil until cooked (but not
crispy). Let it all sit in the pan for a
bit.
Boil your potatoes in salted water. I like to cut them into more or less evenly
sized chunks. Drain them and let them
sit a while to let them dry out a bit.
Add the bacon and the fat/oil from the pan. Add some lemon juice (about half in amount of
the oil) and a little spoonful of mustard powder. Pepper to taste and check for saltiness. A lot of bacon is really salty so you may not
need to add any salt.
The recipes that are basic are usually the best ones! I am always looking for ways to shake up my potatoes, so I will give this a try. :)

No apologies for basic -- those are the meals that are perfect for busy nights. Everything is better with bacon, isn't it?
