Bacon Potatoes

Carole's Chatter: Bacon Potatoes

Apologies that this side dish – which I have called Bacon Potatoes – is so basic.  But it was tasty.


A few rashers of bacon
Oil for frying – I used a mix of chilli oil, garlic oil and extra virgin
Lemon juice
Mustard powder
Salt if your bacon isn't salty enough
Sprig of mint for garnish


Cut up the bacon into strips.  Fry it in your oil until cooked (but not crispy).  Let it all sit in the pan for a bit.

Boil your potatoes in salted water.  I like to cut them into more or less evenly sized chunks.  Drain them and let them sit a while to let them dry out a bit.

Add the bacon and the fat/oil from the pan.  Add some lemon juice (about half in amount of the oil) and a little spoonful of mustard powder.  Pepper to taste and check for saltiness.  A lot of bacon is really salty so you may not need to add any salt.

Stir and serve.  I used a sprig of mint on top for colour.

  3. No apologies for basic -- those are the meals that are perfect for busy nights. Everything is better with bacon, isn't it?

  4. Baaaacon! It's a gem to add to casseroles or simple side dishes!

  5. Indeed, bacon makes most everything better. I like the seasonings you combined with those bacon potatoes.
