Chicken burgers

Carole's Chatter: Chicken Burger


These Chicken Burgers were made with minced chicken.

The patties were made of:

Chicken mince
Breadcrumbs with a little crème fraiche to moisten them
A beaten egg
Some sliced green spring onion (scallion)
1 tsp of Mexican seasoning
Handful of grated parmesan cheese
Salt and pepper
1 diced gherkin
1 teaspoon of garlic infused oil

I had intended also to add some chopped fresh herbs (thyme, basil and parsley) but forgot so I added them to the sauce instead.

I formed each pattie by hand – but used an ice cream scoop to ensure each pattie had the same amount in it.  I popped a cube of cream cheese into the middle of each pattie.  When we ate them this wasn't very noticeable – next time I'll use a cube of cheddar instead.

I froze some of the patties uncooked to make for a quick meal later.
