one thing people fail to realize - as with any large country - what is true "mexican" in one part is not recognixed in another. The simple taco varies greatly all over as does the stapl meat for each region. The enchilada in Texas (presented as Tex-Mex) is completely different than one in Mexico city. You get the idea. The one thing that is consistant is the use of corn and a side of rice and beans...and if you have not had some one from mexico cook rice and beans - you have not lived!
