This
simple salad plate is not a recipe
as such, it's more of an assembly! But
by just taking the little bit of extra time to lay it out on a plate you have
something that is attractive to the eye.
As
you can see from the photo I mostly alternated red and green in rings. I used a radish, a tomato, part of a red
capsicum (bell pepper), part of a courgette (zucchini) and a red and green
chilli. For the dressing I simply
sprinkled the plate with salt and pepper, a squeeze of lemon juice and some
good extra virgin olive oil. Simple and
even healthy!

Reminds me of the huge Victorian 'salmagundy' salads- where they displayed all the veg in beautiful concentric circles.

Such a pretty salad, but something I never think to do. I'm more of a "everything into the bowl" kind of salad maker. :)
