Drunken Spag Bol (with Pappadelle)

Drunken Spag Bol


My blog friend Jenny Eatwell inspired this dish.  Do visit her blog, you will enjoy the food.  This is the link Don't you love the blog name?

Using her post as a starting point I gathered together these ingredients:

Bottle of Pinot Noir – a light red wine
Pasta – I used pappadelle instead of spaghetti
Beef mince (ground beef)
1 tin Italian chopped tomatoes
1 large onion, finely chopped
Garlic – minced with my microplane
A jar of tomato paste/puree (I had never heard of Passata – I used a pasta sauce instead)
Pinch of dried oregano
Salt and pepper
Olive oil
Parmesan cheese

First, I fried the onions and beef (and poured off some of the fat once it was done)

Then, I added the tomatoes, tomato puree, ½ cup of the wine, oregano and seasoned it with salt and pepper (not too much salt because there was some in the jar of pizza sauce)

This made a very nice mixture for the top of the pasta.



I cooked the pasta in half water/wine as suggested but didn't really like the texture/taste – next time I think I would just use salted water and put more wine into the sauce!  And it did feel like a waste when you threw away the wine/water mix.
