Al Brown is a popular New Zealand chef. He started a good restaurant in Wellington called Logan Brown but lately has starred in TV shows and has written books.
I particularly enjoyed the series Hunger for the Wild. He has a no nonsense and very Kiwi way of looking at food.
He is a mad keen fisherman. His book Go Fish – is one I need to get sometime.

· Don't take yourself or your food too seriously.
· Keep it simple.
· Less is usually more.
· The fundamentals of cooking are the most important.
· Life is more important out of the kitchen.
· Salt, pepper, sugar, acidity, texture!
· Surround yourself with enthusiastic talented people, you can't do it all yourself.
