Shrimp & Zucchini Stir Fry



Carole's Chatter: Shrimp & Zucchini Stir Fry


This Shrimp & Zucchini Stir Fry is simple and quick to do – but you do need to have some Chinese ingredients on hand.  You could try it without.  I have suggested some alternatives in the ingredient list.

Ingredients:

Frozen shrimp
2 zucchini – sliced
Knob of ginger cut up into batons
Small amount of red onion
Garlic oil/ canola oil
Small piece of fresh chilli
Cornflour (cornstarch)

For the seasoning – Rock sugar (you could use ordinary but rock sugar makes things glossy), soy sauce (you could use Worcestershire sauce), Fish sauce (or salt), Chinese Cooking Wine (or a splosh of white wine or a teensy bit of vinegar), Pepper

Method:

If you were an organised person you could defrost the shrimp in advance.  But you are cooking on a high heat in a stir fry so I am happy to cook them from frozen.  I wouldn't do that if they were large prawns.

So heat up your pan until it is just about smoking and then put your oil in.  I use a mix of garlic oil and canola because fresh garlic doesn't agree with me.

Fry your ginger, onion, shrimp and zucchini – moving them around with a spoon.  Add your flavourings – try to keep them in balance.  Finally add your spoonful of cornflour to a little cold water, stir and then stir through your stir fry. 

Total cooking time is less than 5 minutes and other than that the only fiddly prep is cutting up the ginger, onion and zucchini.

Garnish with your fresh chilli.

BBC Stir Fry (Beef Broccoli & Courgette)

This stir fry had a great combo of flavours and was also very tender – the first time I cooked it.  Unfortunately when I reheated it the beef got a bit tough – note to self don't cook early to be able to take pics and then re-heat on anything other than a very low heat.

Ingredients:

Broccoli – blanched or sweet stem
Strips of Premium Beef
Courgette (zucchini)
Coriander (cilantro) leaves
Oil – mix of sunflower and sesame
Lump of rock sugar
Chinese cooking wine

For the marinade:
Sour – ¼ tsp tamarind puree, 1 tsp Chinese black vinegar
Salt – soy sauce
Heat – 1 tsp black bean chilli sauce
Sweet – none in marinade mix for at least 1 hour


Method:

Blanch the broccoli (unless is sweet stem or tender stem)
Cut up the broccoli and courgette
Marinade the beef in the marinade
Fry the beef in the oil mixture quickly and then add the lump of rock sugar
Add the vegetables along with a splosh of Chinese cooking wine
Add your coriander leaves
Serve almost immediately with a garnish of a small amount of chopped red chili

Pineapple beef & ginger stir fry

Carole's Chatter: Pineapple Beef & Ginger Stir Fry


I recommend this Pineapple Beef & Ginger Stir Fry to you.  It was simple, very tasty, looked nice and an all round success.

Ingredients:
Good quality beef cut into thickish strips
Fresh ginger – cut up into matchsticks
A tin of pineapple pieces (drained)
Oil for frying

For the sauce:
1 Chilli sauce (I used black bean chilli)
2 Brown sugar
1 Rice Wine vinegar
3 Soy sauce
1 Fish sauce (or salt)

Method:

Mix up the sauce and add the beef and stir thoroughly and set it aside in the fridge for at least an hour for the flavours to start melding.

Sear the meat in batches and set it aside

Fry the ginger off in the same pan until golden and then add the pineapple.

Add the meat back together with any remaining marinade/sauce.

Serve with rice.
