Celebratory Chicken Nibbles – a Triumph!

 


My food quite often turns out ok but this time was a true triumph.  Finger-licking good in fact.

 

Ingredients:

 

Chicken nibbles (brought to room temperature)

 

For the glaze:

2 apricot jam

1 cranberry jelly

1 cherry brandy

1 limoncello

1 dijon mustard

1 sweet chilli sauce

1 soy sauce

½ tomato paste

Salt and pepper

 

Method:

 

Heat the ingredients for the glaze in a small pot and then let the mixture cool.  I used a large tablespoon as my measurement unity – but just apply the ratio and you should be fine.

 

Heat your oven to a moderate heat.

 

Line a large baking tray with baking paper and put a rack on top.  Lay out your chicken nibbles and brush each one on the top with the glaze. Pop them in the oven and in about 30 minutes turn them over and glaze the other side.

 

After another 20-25 minutes turn again (to the presentation side) and dab each nibble with glaze.

 

After that just keep on glazing every 15 – 20 minutes without turning again.

 

I let the cooked nibbles sit on the bench for half an hour or so before eating them.  Covered to protect from pesky flies of course.

  1. This would make a good new years eve nibble. I like the flavors of chili sauce and the jam.
