I'm not going to dignify this one as having a recipe! For a light lunch I just lightly hard boiled an egg.
Cooked some toast, slathered it with mayonnaise. Then added slices of avocado on top (dipped in some acidulated water). Salt (pink) and pepper (black).
Then some slices of the egg on top. And a piece of parsley to garnish.
Oh you can call this a recipe. I want some and I have the ingredients, for lunch today.
ReplyDeleteI have some boiled eggs in the fridge AND half of an avocado! And some 40 calorie a slice of bread....I'm going to go fix my breakfast now!
