I had a head of broccoli, some cream and frozen cooked
prawns. So a soup it was.
Ingredients:
Onions – mix of red and brown
Leek
Oil
Crispy shallots
Seasonings – salt,pepper, cayenne pepper
Pickle juice
Medium potato (floury)
½ head of broccoli
½ cup of cream
1 tblsp sour cream
Chicken Stock – concentrate plus water
Prawns
Basil
Method:
Dice your onions and saute on a low heat with olive
oil.
When soft add your sliced leek.
Season with salt, pepper and cayenne pepper.
Steam your broccoli and potato. Add the cream and sour cream and whizz
together with a stick blender. The
result will be quite thick.
Add the mixture to your pot along with the chicken
stock concentrate and some boiling water – add until you are happy with the
consistency of the soup.
Add a splash of pickle juice.
Thaw about 6 prawns and then add to the soup right at
the end along with some chopped basil.
This would be lovely chilled for our gathering heat wave.
