Banana Loaf with Lemon Drizzle


Carole's Chatter: Banana Loaf


As you know, baking is not my forte.  So some overripe bananas spurred me into action.  The result was surprisingly successful given a couple of hitches.

Ingredients:

140g softened butter (plus a bit more to butter the tin)
140g white sugar
2 eggs, beaten
140g self-raising flour
1 tsp baking powder
2 ripe bananas, mashed
For the icing – 50g Icing Sugar, lemon juice

Method:

Heat your oven to 160C (about 320 F)

Butter a loaf tin – I only had a square one.  Line it with baking paper

Cream your butter and sugar together – things were going smoothly until I discovered that my stick blender was broken.  So I did this by hand – so it was nowhere near as smooth and creamy as it should have been. 

Slowly add the beaten eggs together with a smidge of flour.

Fold in the flour and baking powder and the mashed bananas.

Pour into your tin and bake for 30-40 minutes.

Leave in the tin for 10 minutes or so and then turn it out onto a wire rack.

When cool drizzle the icing over it (ahem it wasn't quite cool).

  1. I love lemon and my husband loves bananas . . . maybe I should give this a try (and wait until it's cool before adding the drizzle -- LOL)

  3. Lemon anything floats my boat. This would be a nice addition to afternoon coffee.
