Watermelon Rind Chutney




I'm on a waste reduction kick so decided to use the part of the watermelon I usually chuck out.  The result was spicy but still a little crunchy.

Ingredients

Watermelon rind – about 3 cups
½ cup rice vinegar
½ cup sugar
1/3 cup water
1 tblsp grated ginger
1 tsp whole black peppercorns
½ red chilli (sliced into thin rounds)
1 tsp coarse salt

Method:

Peel the green skin off the rind and then cut it up into chunks.

Put the rinds in a pot together with all the other ingredients and bring to a boil.  Boil for an hour and then check whether you are happy with the consistency.  Give it some more time if you want it softer.

  1. I am not a fan of melon of any description so this wouldn't be something that I would try but I do think it is interesting to see what you have done with it.

  4. I have had watermelon pickle and I like the looks of this chutney. Great way to reduce waste for sure! ;-)
