I noticed a Mary Berry recipe for meatloaf that was quite different from anything I've done before.  This is a link to a version of her recipe on another blog.
Of course I didn't follow it exactly – I didn't have bacon rashers only bacon bits so that affected things.

It turned out ok – maybe a tad bland for our taste – and didn't slice well… but will be worth working on further.

Ingredients:

500g beef mince
1 can of chopped tomatoes (I used about ¾ of it)
1 cup of breadcrumbs (instead of herbed stuffing mix)
½ red onion, chopped
¾ carrot grated
2 Brussel sprouts, sliced (leave out next time?)
No garlic or parsley
1 egg, beaten (next time 2?)
1 tbsp Worcestershire sauce
Salt and black pepper
Bacon pieces

Method:

Preheat your oven to about 200C

Mix everything except the bacon together in a bowl

Line a loaf pan with the bacon – I could only put it in the bottom of the pan and a bit up the sides – no delicate overlapping possible.

Fill the loaf pan with the meat mix – I pushed it in and then put cling film on top and cans on top of that – trying to weight it down.

Turn out into a roasting pan and roast for 1 hour.

I forgot to give it another 15 minutes on a bit higher heat – maybe that would have firmed it up!

The addition of the chopped tomatoes didn't make it too sloppy so I'll be doing that again.
