Pork and Potato Curry – An Unusual Success

So I had some pork mince (ground pork) and the usual question arose – what to do with it.  I also had some leftover coconut milk.  I ended up with this non-traditional curry that worked out well.

Ingredients:

Pork mince
Potato
Coconut milk
Turmeric
Curry powder
Fish sauce
Pepper
Crispy shallots
Lemon juice
Chicken stock cube
Vegetable Oil

Method:

Brown the mince – just a quick cook, it won't go very brown

Add the crispy shallots (store bought from the Asian section)

Oil the bottom of a casserole dish.  Layer slices of potato on it – I used salad potatoes.

Then put the mince/onion mix on top.

Mix together the coconut milk, turmeric, curry powder, Fish sauce, pepper and lemon juice – adding the crumbled stock cube.  Pour this over the pork and potato.  If you don't have fish sauce just add salt or soy sauce.

Bake in a moderate oven for about 1 hour – just check the potatoes are tender before you decide it's ready.

The result was creamy potatoes and a combination of crispy pork bits and softer ones.  A nice texture.

  2. I’m a huge fan of curry. Was it spicy or mild? I always try and use up anything i the fridge too.
