Omelette
Stack isn't quite right as a name for this invented
dish. It's an omelette with fried rice,
onions, sour cream, cheese and salmon all stacked on top. It made a delicious, if rather large, lunch
for 2.
Ingredients:
4 eggs plus 4 splashes of water
Pepper
Diced shallot
Chilli powder, turmeric, vegetable oil
Leftover over rice
Crispy onions
Cheese – last bits of mozzarella & parmesan
Crème Fraiche
Smoked salmon (peppered)
Capers
Method:
I used 2 pans – the first one to soften the diced
shallots and then fry the rice in. I
used vegetable oil plus some chilli powder and turmeric. I also stirred through a sprinkling of crispy
store bought shallots.
In other pan I started a 4 egg omelette. When it was starting to firm on the bottom I
sprinkled some cheese over it.
I then spooned the rice/onion mix over the omelette. Then on went the smoked salmon (roughly
flaked) and a sprinkling of capers. Serve almost straight away - the salmon will be slightly warm.
