Savoury Bread Frittata


Carole's Chatter: Savoury Bread Frittata?


I couldn't think of a good title for this dish.  I don't think it's a frittata although it has eggs in it.  I don't think it's a bread pudding, although there is stale bread in it.  Whatever, it is a good way to whip up a filling lunch with only a handful of ingredients.

Ingredients

2 leftover hamburger buns (with sesame and caraway seeds)
6 eggs
Can of evaporated milk
Salt and pepper
Tiny bit of cayenne pepper
Butter
Some leftover ham, sliced
Grated cheese ( I used a mix of pizza blend and freshly grated parmesan)
If I had been thinking I would also have added a few leaves of baby spinach

Method

Preheat your oven to a moderate heat.

Grease your deep oven dish with butter – generously – or you know what will happen!

Slice your bread.

Whisk the eggs and milk together

Put your first layer of bread on the bottom, season it, add some of the grated cheese and then pour over some of the eggy mixture to cover.  Put on some of the ham.

Repeat with another layer of bread, cheese, ham and seasoning.

Because I didn't dip the bread into the egg mixture I just pressed down on the top of the dish to make sure the egg squeezed through the bread.

A fine layer of parmesan on top along with a few knobs of butter and you are ready to pop it into the oven.

Mine took about 35 minutes to cook – but all my ingredients were pretty cold at the outset – if you have them at room temperature the cooking time would be less.

This was tasty and filling – you couldn't actually taste the bread itself but it gave the dish body – and the sesame and caraway seeds that were on the buns added a nice zing of flavour.
