As a nod to the retro prawn
cocktail, I did this cocktail using smoked tuna rather than prawns. I hadn't had smoked tuna before and was very
impressed with both its flavour and texture.
It was hand smoked – ie no chemicals so that was good.
At the
bottom of the cocktail is a bed of shredded lettuce. The flakes of tuna were
mixed up with cubes of avocado (with lemon juice on them to stop them browning),
chopped red onion, some finely chopped chilli and salt and pepper.
The sauce drizzled over it was
Sauce Marie Rose – a mix of ketchup (or tomato sauce as we call it), mayonnaise
and cayenne pepper.
The cocktail was finished off with a garnish of chopped spring onion (scallion) – the green top bits.
