Watermelon Fizz – not quite a drink but not quite a dessert


Carole's Chatter: Watermelon Fizz – not quite a drink but not quite a dessert


Ingredients:

½ watermelon (skin on)
Ginger beer (or ginger ale)
Ice cubes
Finely shredded mint leave

Method:

Take your cold watermelon and scoop out balls of melon – with a melon baller if you have one – I don't so I used a little rounding measuring spoon.  Set the balls aside in a bowl.

Don't go all the way to the bottom.  Put the melon balls back in (the untidy ones first) and then add ice cubes and pour the ginger beer over.  Lastly shred a little mint and sprinkle it over.  I also used a couple of whole leaves as a garnish.

  2. I LOVE this!!! I love watermelon and used to get an entire half of a BIG watermelon all by myself! I am going to make this. Have you tried watermelon cubed up and tossed with crumbled feta cheese and chopped mint? That is seriously good, too!
