Kiwi Open Reuben Sandwich


Carole's Chatter: Kiwi Open Reuben sandwich


I had some leftover corned beef and wanted to do something different with it.  So the Kiwi Open Reuben Sandwich was born.  Kiwi – because it has beetroot in it – we even put it into burgers.  Open because the bread was only underneath.  Reuben as a play on the classic US sandwich.

Ingredients:

Corned beef (thinly sliced)
Beetroot Sauerkraut (store bought)
Cheese (grated)
Bread (buttered on the down side)
Gherkin mustard sauce – chopped gherkin, Dijon mustard, lemon juice, cream)

Method:

Heat your oven or grill to quite hot.

While it is heating assemble your sandwich.

Layers from bottom to top were:

Butter
Slice of Bread
Sauce
Corned beef
Sauerkraut
Cheese

This was a hit!
