Winter Salad


Carole's Chatter: Winter Salad


One of the many things I miss when it is winter is salad – and then in summer I can get sick of them.  Such a contrarian!  So here is how I did a Winter Salad.  Enjoy.

Ingredients
4 just hard boiled eggs
Packet of Bacon Pieces (fried)
Smoked salmon (flaked)
Croutons (bought)
Parsley or other herb for garnish

Dressing – Mayo, Capers, Lemon juice, Pepper, Fish sauce (or salt), the bacon fat.

Method:

I had boiled extra eggs at breakfast time so used those but doing it just before would be even better.

I fried off the bacon and flaked the salmon.

I made the dressing in a little jar with the final ingredient being the bacon fat remaining after frying the bacon.

Then I just put the eggs, bacn and salmon into a bowl, poured on the dressing and then sprinkled the croutons on.  I did them last because I was worried they'd go soggy but I think I should have sprinkled a tiny bit of dressing on them as well.

A sprinkle of chopped parsley and the salad was done.

  1. I love salad all year long. Right now we are enjoying the seasonal summer veggies especially tomatoes and corn which we often put in our salads

  2. i really enjoy salad, year round. in the winter, i often make a small salad to go with our dinner!!

    this looks delicious!!! i like fresh, homemade dressing and the ingredients of this one sound very good!!!
