I felt like some 'fast food' but didn't want to go out
to get it so I made some chicken burgers.
They worked out ok – not particularly fast but very tasty.
Ingredients:
Chicken thighs
Egg
Cream
Breadcrumbs (panko)
Seasoning
Oil for frying
Gherkins
Tomato
Cheese
Add lettuce if you have it
Burger buns
Cranberry Jelly
Dijon mustard
Mayo
Cream
Lemon juice
Pepper
Method:
I turned on the oven first because I decided to fry the
chicken until it was crispy and golden on the outside and then finish it in the
oven.
I whisked the egg and a spoonful of cream together. I
seasoned both the egg mixture and the breadcrumbs. I took each piece of chicken and dredged it
first in the eggy mixture and then in the breadcrumbs.
I then fried the chicken pieces in a hot pan until I
was happy with the crispiness and then I popped them into the oven.
While they were finishing cooking I sliced up the
gherkins, cheese and tomato ready to be put into the burger.
I made the sauce which turned out a nice balance of
sweet & sour – it was no more complicated than mixing the last 6
ingredients and then adjusting to taste.
It would have been just as good if you just used the cranberry, mustard
and a little mayo.
I sliced the burger buns and then fried the cut side in
the pan using the fat left from frying the chicken. Naughty diet wise but very nice.
We did our own burger assembly at the table. That way each of us could choose the
accompaniments and the quantity of sauce.
Huh...looks good....but IDK! The cranberry mustard is my worry
