Yet another way to use courgettes or zucchini (they
are the same thing)
This simple little salad just hit the spot.
Use a vegetable peeler to create long thin strips
of zucchini and dress them with a mixture of:
2tablesp olive oil
½ tsp lemon zest
1 tablesp lemon juice
1 tablesp vinegar
Salt
Let it marinate for 15 minutes and serve with a
garnish of spring onion tops and chopped chilli
