I wanted a quick lunch so concocted this cross between
a soup and a noodle dish.
Ingredients:
Prawns (small ones that could go straight in without
thawing)
Spinach (small frozen block)
Basil
Chilli paste
Fish sauce (or salt)
Chicken stock cube (or vegetable one)
Noodles (fresh)
Cherry tomatoes
Leftover corn kernels
Pepper
Method:
Boil some water.
Use some to soak the noodles in before draining.
The rest of the water goes into the 'soup' along with
all the other ingredients (including noodles).
Because you started with hot water the 'soup' is all
done in less than 5 minutes.
The key is to get a reasonable balance between the
saltiness (fish sauce & stock cube) and heat (chilli paste & Pepper). If you wanted a little sour, just add a tad
of lemon juice.
