This meal was totally inspired by having leftover
sausages and wanting a comfort food meal.
Ingredients:
Leftover Sausages
Potatoes/Sweet Potatoes (Kumara)
Butter
Cream Cheese
Grated Cheese
Lashings of salt & pepper
Store bought Peppercorn & Cream sauce
Teensy bit of curry powder
Method:
You can make the mash well ahead of time. To reheat it just add some melted butter and
stir at the same time and you would not know it was a make ahead.
Make a simple mash of your potatoes/sweet potatoes
being sure to add plenty of butter. In
my case I also added a square of cream cheese and a handful of grated cheese. Don't forget to season your mash well. My mash wasn't very creamy which I'm ok
with. If you like it creamy add cream or
milk and stir until you get the texture you want.
Warm the store bought sauce in a pot together with a
hint of curry powder. You don't want to
be able to taste the curry as such – but it does add interest.
Warm your sausages through – I used the microwave.
Simple comfort food which hit the spot.
Sometimes comfort is the perfect thing. Who needs to be classy all the time?
