I had some pork steaks and a can of pineapple pieces so
I decided to do a sweet & sour pork. Originally I was going to use a store
bought sauce but when I looked closely at the ingredients, there were things in
there that would have disagreed with me.
So I set about making it from scratch.
I marinaded (or
is it marinated?) the pork for a few hours in the following:
Soy sauce
Garlic infused oil
Fish sauce
Sweet chilli sauce
Pepper
Sherry vinegar
Method:
Cook covered in foil in a slow oven until the pork is
tender. Take the cover off and add
grated ginger, pineapple pieces, pineapple juice and tomato paste along with
some cornstarch (cornflour) to thicken the sauce.
After 10 minutes check the sauce for balance and
seasoning. Add salt if necessary and/or
sugar. Add thinly sliced spring onion (scallions)
and zucchini for the last 10 minutes.
Serve with rice.
Garnish with some chilli or something green.
