Tuna Stuffed Kamo Kamo

Carole's Chatter: Tuna Stuffed Kamo Kamo


So what is a kamo kamo, I hear you asking?  I had never seen one before either until very recently.  This is a New Zealand vegetable – it's a type of squash – think a large zucchini but more robust and nutty tasting.  It is also known is kumi kumi.

Carole's Chatter:  Kamo Kamo

To prepare the kamo kamo for stuffing just halve it longways and scoop out the seeds.

Stuffing ingredients:

Canned tuna (drained)
Cherry tomatoes
Chopped spinach
Mayo
Olive oil
Salt and pepper

Topping – grated cheese

Carole's Chatter: Tuna Stuffed Kamo Kamo

Just pop the stuffing into the kamo kamo, top with grated cheese and roast in a moderate oven for about the same time as a potato would take.

Very nice for lunch.

  1. I've never heard of kamo kamo either. But I really like the idea of stuffing a squash with tuna. Sounds like an easy dinner.

  6. It looks as large as a watermelon but I see, once you stuffed it that's it a big zucchini like squash. I like tuna so, I would try this.
