Savoury Bread Frittata

Carole's Chatter: Savoury Bread Frittata

I couldn't think of a good title for this dish.  I don't think it's a frittata although it has eggs in it.  I don't think it's a bread pudding, although there is stale bread in it.  Whatever, it is a good way to whip up a filling lunch with only a handful of ingredients.

2 leftover hamburger buns (with sesame and caraway seeds)
6 eggs
Can of evaporated milk
Salt and pepper
Tiny bit of cayenne pepper
Some leftover ham, sliced
Grated cheese ( I used a mix of pizza blend and freshly grated parmesan)
If I had been thinking I would also have added a few leaves of baby spinach

Preheat your oven to a moderate heat.

Grease your deep oven dish with butter – generously – or you know what will happen!

Slice your bread.

Whisk the eggs and milk together

Put your first layer of bread on the bottom, season it, add some of the grated cheese and then pour over some of the eggy mixture to cover.  Put on some of the ham.

Repeat with another layer of bread, cheese, ham and seasoning.

Because I didn't dip the bread into the egg mixture I just pressed down on the top of the dish to make sure the egg squeezed through the bread.

A fine layer of parmesan on top along with a few knobs of butter and you are ready to pop it into the oven.

Mine took about 35 minutes to cook – but all my ingredients were pretty cold at the outset – if you have them at room temperature the cooking time would be less.

Carole's Chatter: Savoury Bread Frittata

This was tasty and filling – you couldn't actually taste the bread itself but it gave the dish body – and the sesame and caraway seeds that were on the buns added a nice zing of flavour.

Sorry about the rubbish pics – I rushed and had bad light.

  1. I love leftover meals like this - brilliant!

  2. I think it would be a savory bread pudding, but whatever you call it, I say delicious, and a great use of what's on hand. I always have stale bread to use up.

  3. I like how you're able to think of such creative ways to use leftovers!

  4. I just bought a half ham at Costco and was looking for recipes, I'm going to make this one for sure. Great timing!

  5. I like this kind of dish thàt uses up the leftover bits of this and that. I hate throwing out leftover buns. I'm going to try this out. I think I'll add spinach too. Thanks Carole.

  6. Yum this sounds delicious. I love that I it uses stale hamburger buns and ham. I frequently have lots of both left over and this would be a good way to use them up.

  7. Clever way to use up the hamburger buns -- I usually put them in the freezer and forget about them. I may be giving this a try after our up-coming July 4 holiday.

  8. You picked a good title for it. I know the ham would be a big hit here, we love ham. And of course, I always seem to have bread going stale and hate throwing it out. You are a creative cook!

  9. Yum so good. I love this dish.

  10. Great way to use hamburger buns! We always have some leftover and I usually just freeze them to use next time but always forget until they're freezer burned. Yum!

  11. I've seen similar preparations called "strata" -- FWIW. Yesterday at a brunch celebration I was served something like that with spinach and squash cubes in between the bread cubes. I think it was a vegetarian brunch, so no ham.
But ham sounds like a very delicious idea.

ANYTHING to use up those leftovers!

  12. I'd cube the bread and call it savory bread pudding. I like the idea of slices, but then I'm not sure what I'd call it -- layered savory bread pudding? Very creative!
