Tuna salad with cherries

Carole's Chatter: Tuna Salad with Cherries

If you have a can of tuna, you have all you need for the makings of a meal.  This time I did a Tuna Salad with Cherries. 

I just prepared some salad items I had in the fridge and put them into a bowl with the tuna chunks.  I used ½ a red onion, sliced.  ½ a camembert cheese (torn into chunks).  Some gherkin chopped up.  Part of a red bell pepper chopped.  A chopped tomato (with most of the seeds squeezed out first).  The sliced bottom of a couple of spring onions (scallions) – keep the sliced green tops for garnish.

When it was all on the plate I popped a pile of pitted cherries (bottled ones) on the top and drizzled the whole thing with a dressing before scattering the green spring onion slices on top.

For the dressing I just mixed a bit of the cherry juice from the jar the cherries came in, some crème fraiche, some hot chilli jam, salt and pepper.

I also dotted some horseradish sauce around and some chutney.

Fresh and yum.

  2. The cherries are an unexpected, but I'm sure tasty, addition. I always have a can of tuna on hand!

  3. I put tuna on my tossed salad all the time -- it's a great light summer dinner. Cherries are great -- so are grapes and oranges.

  4. See, that's my kind of meal. You and I would get along swimmingly. My husband would arch an eyebrow at a tuna based salad but I love them.

  7. I never thought about putting cherries in a salad. Well, I've used dried cherries, but not the sort you used. Actually sounds very good. And it looks very tasty.
