Apricot Cola Ribs

I based these Apricot Cola Ribs on a Dorie Greenspan recipe.  They were simply delicious.  The original recipe called for a large rack of spareribs.  I only had a few spare ribs that had already been cut up (and were on special).  I used the quantities of the marinade that Dorie suggested and of course it made far too much – so I have reduced them a bit for this post.

Ingredient List

Apricot jam – ¼ cup
Orange juice – ¼ cup
Lemon juice – small lemon or ½ large one
Chinese Five Spice powder – 1 tsp
Ground ginger – ½ tsp
Cola – about a cup
Salt and pepper

First heat your apricot jam and orange juice while stirring until it just starts to boil.  Take off the heat and let it start to cool down and then stir in the lemon juice.

Mix the five spice powder ginger and salt & pepper together.  Rub this all over your ribs.  Then coat the ribs in your jam mixture and leave them to marinade – overnight would be perfect.

Bake your ribs in a moderate oven, baste them every half hour – after 1 hour pour the cola around the ribs and then baste about every 5 minutes for half an hour.

When they have the colour you like and are cooked, take them out and let them rest a bit before eating.
