Pea and Lettuce salad

I have a simple, fresh salad for you today.  Pea & Lettuce Salad.

I used fresh peas which I podded – is that a word?  It takes a while but the results are better in texture than using frozen peas.  I then boiled them for 3 minutes in salted water and then blanched them in iced water – this both cools them for going into the salad and ensures their colour stays nice.

I sliced up my lettuce – in this case baby cos – but most green lettuces would work.

Mix your lettuce and peas together.

The dressing needs to be done just before serving or the lettuce will wilt. I just did a dressing with extra virgin olive oil and raw apple cider vinegar in about equal quantities and seasoned it with salt and pepper.  You could use any other light coloured vinegar you like but they say the raw apple cider vinegar is good for you.

After dressing the salad sprinkle some sliced spring onion tops (scallions) for extra garnish – or some herbs would also be nice but I didn't have any fresh ones on hand.
