Quinoa Salad

Quinoa salad


This was my very first time using Quinoa (which I discovered is pronounced Keen-wah and not as Quin + o +a).  It is an ancient grain that is supposed to be very good for you. 

I cooked up the quinoa as per the instructions on the packet – but of course, being unable to follow instructions, I did change it up a bit by putting ½ a lemon in with it while it was cooking.

When the quinoa was cooled I added it to a salad made from:

Tiny bit of onion finely chopped
Basil leaves – torn
½ a red chili – de-seeded and finely chopped
A spring onion (scallion or green onion) chopped
Some quartered cherry tomatoes
¼ tsp of crushed garlic

I just added a splash of neutral oil and a squeeze of the juice from the cooked half lemon for a simple dressing – along with salt and pepper of course.


It made a pleasant salad without being unforgettable.
