Here's
a simple idea for jazzing up courgette
– you might call it zucchini! The key is to slice the courgette most of the way
to the stalk and then press it down quite hard with the flat of your palm so it
forms a fan shape.
Then
simply season it with salt and pepper.
Sprinkle on paprika and parmesan cheese.
A good drizzle of olive oil and you're ready to go.
Pop
it into the oven on a high heat for about 15 to 20 minutes – or, as the
cookbooks say, until golden brown.
