Salmon bites

In honour of the next Food on Friday being about Finger foods for Parties, I wanted to show you these Salmon Bites.  Now, I know they would be too messy to eat like this so for a party I would pop each one onto a little wafer or bruschetta.

To make these salmon morsels, take some thinly sliced smoked salmon and lay it out on the board with the slices overlapping each other a bit.  Smear over some crème fraiche (you could use cream cheese or sour cream), squeeze a little lemon juice over it and salt and pepper (white ground pepper works the best).  Then roll it up in plastic film and twirl each end so you have a little round salmon sausage.


I then popped this into the freezer for 20 minutes to make it easier to cut.  If I had had time to leave it a bit longer the slices would have been tidier.  But you can call my ones rustic.
