Pork chops with a piquant red pepper sauce

Pork chops with piquant red pepper sauce

The sauce went very well with these pork chops.  To make the piquant red pepper sauce, I simmered up:

Chargrilled capsicum (red bell pepper) (I used one out of a jar)
Garlic
½ little hot red chilli
A good squirt of tomato sauce (ketchup)
Salt and pepper
A splash of white wine vinegar
A splash of extra virgin olive oil

When the flavours had melded after 10 minutes or so, I gave it a whizz up with my little stick blender.  It would be nice if I had a cordless one!

The pork chops were tenderised – read bashed hard with a pestle wrapped in cling film – and then given a very quick sear in a pan for colour and then finished in the oven for about 20 minutes.

The meat and sauce was served with roasted potato, carrot and Brussels sprouts.

  1. This look really good, Carole! Simple but with a lot of flavor (and I happen to like red peppers). Thanks for linking. I'm going to stop in and link with Food on Friday as soon as I can! Hopefully tonight.

  3. My daughter is a massive fan of chops, less so veggies but this sauce - slightly cooled down - could work a treat in getting both inside her :-) Like you would love a cordless hand blender!

Would love for you to share this at Empty Your Archive - we are linking up pork recipes this week, Alice @ Mums Make Lists
