Food on Friday: Eggplant


 ON

The new ingredient is Eggplant or do you call it Aubergine?

Eggplant goes well with:

Anchovies
Basil
Capers
Coconut
Coriander (cilantro)
Cumin
Eggs
Garlic
Haloumi cheese
Lamb
Lemon juice
Mint
Mozzarella cheese
Olive oil
Olives
Onion
Oregano
Parmesan cheese
Parsley
Peppers
Pine nuts
Sultanas
Tahini
Tomatoes
Tuna
Yoghurt

  4. I like eggplant, but I don't use it nearly often enough. One of my favorite ways to prepare it is Baba Ghanoush.

  6. I rely should make eggplant more often! Had to go way back in the archives for my ratatouille with local veggies. I did just make cheesy polenta with garlic stewed eggplant and tomatoes. Will have to make it again and post it! Happy Friday!

    If I'm not stuffing it into spaghetti sauce (my kids will say "this sauce needs more eggplant") it appears that I really prefer to eat my eggplant with my fingers--I'm linking up 2 appetizers and a pizza that I've made using our farm share eggplant.

  11. I could not believe I get to play with you this week. This ajvar is so good as a dip or spread it on a grilled chicken sandwich - it is just great. Now to see what everyone else brought.

  18. Eggplant is a real hit and miss veg for me too - sometimes I love it, sometimes I'm like, meh! I've linked two if my favourite recipes, my Mediterranean Eggplant and Barley Salad and my Greek-Style Grilled Eggplant with Olive Oil, Garlic, Parsley and Feta. Because if anybody knows what to do with an eggplant, the gorgeous Greeks do.

  23. Cooked well, eggplant can be delicious. When it's undercooked or has absorbed too much oil, few things can be worse. Nice roundup of recipes. Thanks again for hosting.

    I am submitting two great aubergine recipes today I'm sure you and everyone will love, these are old 70's recipe's. Aubergine Gratinees and Beef and Aubergine meatballs in tomato sauce.

    I missed the date, but I adore eggplant and couldn't resist adding a recipe. These are the best veggie burgers I have ever eaten - crisp on the outside, tender inside. Delicious!
