I
have not had much joy with cooking eggplant (aubergine). But with the next Food on Friday being about
eggplant I hope to find many new ways of using it.
I
made these Eggplant Croquettes having
been inspired to do so by The Untamed Cook.
They were successful – the better half ate them – but for me they were
still a little bit eggplanty.
To
make them, I first charred 2 eggplants directly on the gas hob. When they were pretty black I popped them into
a bowl and covered it with cling film and let them cool for a while. I then took off the skin with my fingers –
not worrying too much if some little bits stayed on.
Then
I mashed them and drained them of water by pressing down on them in a
sieve. I let them sit for about half an
hour to drain.
To
the eggplant I added, 1 medium potato (cooked & smushed), 1 small egg
(beaten), 2 handfuls of grated cheese, salt and pepper – then mix it up and
give it a bit of a whizz up with a stick blender or food processor. Then add about a cup of breadcrumbs bit by
bit until the mixture is firm enough to hold its shape.
Form
into croquette sharpes and then coat in breadcrumbs.
I am a fan of the humble eggplant, but my husband can take it or leave it. So we don't have it too much. Have never tried croquettes, I am interested.
ReplyDeleteI love eggplant but have never even though of making them into croquettes. What a great idea! I'm definitely bookmarking this recipe to try next time I buy eggplant.
ReplyDeleteI want to like eggplant, really I do! It's so beautiful laying there in the grocery store bins. But I am never happy with it when I cook it.
ReplyDeleteI love eggplant but have never been successful at cooking it. These do look tasty though!
ReplyDeleteI have not been a huge fan of eggplant, but I do like how you prepared it here.
ReplyDeleteThose look good. I like to cube and roast eggplant which sweetens it, then cook it in a sauce -- eggplant readily picks up other flavors.
ReplyDeleteI think my husband would enjoy these.
ReplyDeleteI love eggplant, but I'm the only one in my family. Your croquettes remind me a bit of baba ghanoush, the dip.
ReplyDeleteThese look so delicious. I LOVE eggplant.
ReplyDeleteTHANKS for sharing.

ReplyDeleteI have to say, this looks like one of the best recipes I've seen for eggplant in a long time. I grow it in my garden, so like to have lots of variety in preparing it. I am just popping over from the Marvelous Monday Linkey. I'd LOVE it if you drop by my site at Http://www.kneadedcreations.com and pay a visit! I will look forward to seeing you over there!
