Oxtail stew

Oxtail Stew: Carole's Chatter

If you don't like the idea of Oxtail stew, try to get over it. This was my first time and if I hadn't been looking for something new to do, I might not have risked it. This was one of the most successful dishes I have done for ages.

And it was simple.  You could do it in a slow cooker but because I didn't have one yet I just put it into a casserole dish in a low oven for ages – more than 5 hours.  I didn't pre-brown anything.

So into the casserole dish went the oxtail, some good quality beef stock (from the supermarket), onions, garlic cloves (about 5), slices of carrot, seasoning ie salt/pepper and a couple of bay leaves.  For the last 15 minutes I added some frozen peas.

The flavour was incredible.  The meat was fork tender.  I am the newest Oxtail fan.  Maybe a soup next?

  1. When I first met my husband, I couldn't even look at Oxtail! Now, I love it almost as much as he does ;-) Actually, trying a new Asian inspired Oxtail recipe tomorrow ! Pinned your recipe for next time !

  3. Oxtail and barley soup is my dad's absolute favorite! I make mine in the slow cooker and let it cook all day, just so I can enjoy the smell when I walk in at the end of the day.

  5. I have never had Oxtail Stew but have always been intrigued by it ever since I watched an episode of Julia Child on a PBS channel, many years ago, and she was making Oxtail Stew. Maybe it's time I give this dish a try! It certainly looks delicious~ Lynn @ Turnips 2 Tangerines

  10. Gosh, I haven't made oxtail stew for years. It is delicious and I really must make it again, but maybe I'll wait until next autumn or winter rolls around - right now I'm all about salads and asparagus :-)

  11. I've heard of it for years, but have never tried it. I can say that I have ever seen the cut offered in my stores. If I see it, I will try being brave based on your recommendation!
