Potato Salad

Potato salad by Carole's Chatter


I make Potato Salad quite often.  But I don't use a recipe and pretty much just free form it.  This is one way I did it.

I quartered some small potatoes – they had been washed so I didn't bother to peel them.  Anyway they say there are good vitamins in the skin, don't they?

I put them into a pot of cold water along with 3-4 whole peeled garlic cloves.  Then boiled them for 10 minutes until tender.  How long they will take will depend on the size of the pieces.  I start potatoes cooking in cold water because I understand that you cook vegetables that grow underground from cold and the ones that grow above ground from boiling.  But my better half is not convinced by this theory and doesn't think it makes any difference.

I chopped up a few cornichons (mini gherkins) and some red onion (just a few slices off an onion).  I then mixed through that mayonnaise, salt and pepper and the crushed garlic (once it could be taken out of the potatoes when cooked).


So you drain your potatoes and then put them into your dressing while they are still hot because the flavours meld better.  And you are done.

  6. Everyone loves potato salad and there are so many different ways to make it. I like to stir through some chopped boiled eggs they make the sauce thick and creamy ... and lots of cracked pepper too :)
