Coronation Cauliflower



This dish, which I called Coronation Cauliflower, was inspired by having left over sauce from making Coronation Chicken 

So I took a half cauliflower and broke it up into florets.  I put these into a lightly oiled dish with salt and pepper.  I mixed it all up with the leftover sauce and topped it with grated mozzarella and parmesan cheese.

I cooked it in a moderate oven until golden.  It tasted good but did have a more liquid consistency than I would like.  Next time I would mix some grated cheese through the sauce as well as putting it on top.

  1. I often have difficulty with vegetables releasing liquid when I don't expect. With something like this, it might help to pre-cook the cauliflower in some way and then put it into the casserole dish. Looks yummy and I like the name!
