Pork fried rice



 


I have never been completely successful doing my own fried rice dishes but this one wasn't too bad.

You cook your rice and then drain it very thoroughly.


I made a 3 egg omelette and then rolled and sliced it and set it aside.

I had a piece of pork eye fillet.  I trimmed all the sinew/fat off it as much as I could.  I then sliced it thinly.  (Remember to use a different knife from the one you are going to prep the veges with – or do them first and the pork last)



You need one onion – finely chopped
1-2 red chillies – finely sliced cross ways
A small thumb of ginger julienned
4 cloves of garlic (use less if you aren't a garlic freak)
½ a courgette (zucchini) chopped into small dice and with some lemon juice squeezed onto it
1-2 Spring onions (scallions) – sliced cross ways
Chives – roughly chopped



For the seasoning I used pepper, rice wine vinegar, sesame oil, soy sauce and golden syrup.  Be careful with the sesame oil – try just a few drops – it is very potent.

So you fry off your onion, garlic and ginger in vegetable oil.  Then add your courgette, rice, and omelette.  This only needs about 5 minutes.  Add your seasonings and at the very last your spring onions and chillies.  Don't forget to taste it – it may need extra punch via more sesame oil or soy sauce.

Serve with a garnish of chives.

  12. I love making fried rice. Never turns out quite as good as our local Asian restaurants, but it does the job. I'm going to have to try your recipe. I love rice wine vinegar and never thought of adding that to fried rice.
