Mushrooms on Toast



Mushrooms on Toast

For a quick lunch I whipped up some mushrooms on toast.  This is all I needed:

½ onion, chopped
1 punnet mushrooms – I just used white button
½ tsp porcini powder to give depth of flavour
Touch of chilli flakes
Small amount of chicken stock (optional if you don't eat meat of course)
Splosh of brandy

So I sautéed the onion for a couple of minutes in a mix of olive oil and butter and then added the sliced mushrooms and the spices.   When they are cooked I added the stock and brandy and cooked for another minute or so.  Right at the end (and off the heat) I stirred through a spoonful of crème fraiche – could have been cream or sour cream.

Served on toast it made a nice lunch.

  2. This looks heavenly...Mushrooms anytime for me! Nice combo with toast...i too saute mushrooms in butter with pepper and salt..I don't think my mom will allow me by brandy!

  5. There is an English restaurant here called the White Lion and one of the appetizers is mushrooms on toast...it is fantastic! Now you made me think of it...haven't been there in ages..

    This looks SOOOOO good!

  8. I love mushrooms on toast, but thought I was the only one who ate them. I've never tried porcini powder, but I'll bet it adds a lot of taste, so I'm going to give it a try. Thanks!

  13. Oh yum! This reminds me of mushroom duxelles, which I love. I've never thought to add the porcini powder, which would really up the flavor. Thanks for the great tip.
