Egg Salad Sandwich Mix




I imagine that this egg salad sandwich mix barely deserves the description "recipe" since it is so basic.  But it made a lovely sandwich combined with ham.  (In NZ a sandwich specifically means a filling between 2 fresh pieces of bread – a typical example is below)



You just boil some eggs (see my post  on how I do that).  Then chop them up and combine with a chopped spring onion (scallion), pepper and salt, cayenne pepper, some curry powder to taste, some softened butter and lastly but not least enough mayo to give it a nice consistency for a sandwich.
